Our Cellar

When you visit the cellar, you will realize that it is real and functional. Our cellar is the heart of our farm where we work hard to improve our products year after year. Our vats, pumps, barrels and the tools we use enable us to work with the grapes using natural methods to produce wines of excellence. Computers are not used to control temperature, fermentation or other processes. Here at La Pievuccia we monitor fermentation by listening and feeling the vats and by following the oldest, simplest traditions before us, thereby producing fine natural wines, synergistic with the land, and made with our heart and soul.

 

In the attic, below a traditional wooden beam and natural brick roof, rest the kegs of La Pievuccia’s Vinsanto. The Vinsantaia is an evocative place on the farm where time and the passing of seasons play a major role in the fermentation cycles that pass as this unique wine finds its perfect maturation. When you visit, you will become privy to the rich stories and deeply familial methods of production of this true Tuscan speciality.
